Eat - Lemon Garlic Chicken

We have a lot of chicken to cook up in my kitchen. This is only the beginning. I know I'll be sick of chicken by day two though so I need new recipes. This is one I stumbled across on FoodNetwork.com and modified it a little bit to fit the ingredients I have and servings I needed.

Heat oven to 450

Ingredients:
3 thin chichen breasts
4 cloves garlic, crushed
2 T rosemary leaves
3 T olive oil
1 lemon, zested and juiced
1/4 C white cooking wine
1 T montreal steak seasoning
2 medium zucchinis, chopped
3 small sweet peppers
1 T all-purpose seasoning
salt and pepper to taste

Directions:
1. Spray bottom of baking pan with non-stick spray.
2. Layer zucchini and peppers, coat with all-purpose seasoning.
3. In a bowl mix together garlic, rosemary, oil, and lemon zest. Add chicken and coat with mix.
4. Lay chicken in baking pan over zucchini and pour remaining mixture on chicken. Make sure the garlic is on the chicken. Salt and pepper to taste.
5. Bake 20 minutes.
6. Remove from oven and pour lemon juice and wine over chicken.
7. Turn oven off and place baking pan back in for 5 minutes.
8. Serve chicken, spooning remaining juice on chicken and vegetables.

Eat - Baked Cake Donuts

The other day I came across this recipe on Alisa Burke's blog. I LOVE cake donuts and this seemed so easy I knew I had to make them right away.


I can't lie, hers are much prettier than mine, but I don't own a donut pan. Instead I made baked cake donut muffins...which I think are just called cupcakes...but the recipe is delicious in any form!

Here are mine right out of the oven (9 min bake time!)

And here they are after being dipped in melted butter and cinnamon-sugar!

I think we've already eaten about 10 of them...2 for boyfriend and 8 for me :P
<3 these! PS - In case you were wondering the nutritional facts, I measured them out for you on MyFitnessPal.com. These are the the tiny versions. The larger donuts are approx 300 calories each. I think the smaller, 75 Cal servings make me feel better...until I do the math haha! I added the cinnamon-sugar glaze in there too, so if you don't do that part, ignore the last 3 lines.

Eat - 3 Day Green Salad

This salad takes a slightly new form every time I make. It's called the green salad because my first version was all green but I've branched out to much prettier colored veggies. I like to top it off with ginger dressing but I'm all out so balsamic vinegerette will do today.

This salad cost me under $12 and will feed me for 3 lunches atleast. Love it.




Ingredients:
1 Bag Organic Baby Spinach $3.99
1 Bag Publix Frozen Peas $1.69
1 Carton of Grape Tomatos $2.50
8 Mini Sweet Peppers, diced 2lb bag for $4.99 (about $1.66)
1 Small Can of Publix Sweet Corn $0.75
Total: $10.59 :)
That's $3.53 per serving! (These are giant servings by the way)

Eat - Ham and Cheese Quiche


This is going to be my breakfast for the week (unless I eat it all in one sitting). I used this recipe from Allrecipes.com.

It's so simple! mix butter and hashbrowns and flatten them into a pie pan for the "crust" and bake that for 30 min. Cover that with ham and cheese. Cover that with whipped eggs (I doubled the eggs) and milk (I used my skim lactose free milk instead of suggested heavy cream). Bake it all for 30 more min.

I had to soak up all the bubbling butter with a (hundred) paper towels before it cooled because this just seemed way too greasy for me.

That first bite was delicious. Even though this takes an hour to make I will definitely make it again with some new filling ingredients.
